Behind the Beans: Sourcing the Panama Geisha Odyssey

by LOT61
As part of Reserve O—our competition-level coffee curation—we seek out micro, nano, and experimental lots that push the boundaries of modern coffee craft.
Each selection represents an exclusive, small-batch acquisition—often ranging from just 1kg to 20kg—offering a rare window into the frontier of agricultural science.
To protect these extraordinary profiles, every Reserve lot is sealed at our roastery in custom airtight aluminum bottles with resealable caps, preserving their delicate aromatics until the moment you brew.

The Odyssey begins: Our launch piece is the Panama Geisha Odyssey.
Sourced from the Iris Estate at altitudes of 1,800–2,300 masl, this lot is produced by Jamison Savage in collaboration with Savage Coffees and Project Origin. The cherries undergo 4 to 6 days of nitrogen-controlled anaerobic fermentation in sealed tanks, followed by drying on a multi-tiered raised bed system to ensure optimal balance and humidity control.
After maceration, cherries are removed and placed on the upper level of a 3 tiered raised bed system. Once superficially dried, cherries are dropped to the second level where they are frequently agitated to maintain humidity equilibrium inside the grain. After approximately 25 days, the dried cherries are removed from the beds, placed into hermetically sealed bags, and stored in a bodega for up to 60 days.
Dried cherries are then carefully dry-milled, sorted by size, density, and color, then immediately vacuum packed for export.
The result is an exceptional cup featuring key tasting notes of violet, blueberry, peach, and toffee, underpinned by a creamy body. To preserve its delicate aromatics, each batch is carefully packaged in our custom airtight aluminum bottles.

Introducing the Panama Geisha Odyssey: Pushing Coffee Boundaries
At LOT61, our passion is driven by continuous discovery. As part of our Reserve O curation, the Panama Geisha Odyssey marks an exciting entry in our dedication to micro, nano, and experimental lots that showcase the pinnacle of modern coffee craft.
Created to engage discerning coffee lovers and share our latest roasting achievements, this release highlights extraordinary producers who are reshaping sensory possibilities through innovative agricultural science.
'RESERVE O' our platform of competition level coffee curation. From the high-altitude regions of South America and Africa to the emerging specialty landscapes in Asia, we are sourcing rare varieties and groundbreaking processing techniques to bring the cutting edge of specialty coffee directly to your cup.

The Odyssey process: Perfectly ripe cherries are harvested then carefully deposited in sealed tanks. Nitrogen is periodically infused into the tanks to maintain a controlled extended duration fermentation process.
